GF DF Crispy and Fluffy Waffles!

These waffles are light and fluffy, yet filling. They crisp up really nicely, while still staying soft inside. Gluten free and dairy free. Enjoy them for brunch or anytime a waffle craving hits! 


2 cups MKK GF Everyday Flour
1/2 cup almond flour
2 teaspoons baking powder
1/2 teaspoon salt
3 egg whites*
1/4 c. Apple sauce or 3 egg yolks
3 tablespoons coconut sugar
3 cups dairy free buttermilk**
1/4 cup olive oil
Preheat and grease waffle iron according to manufacturer instructions.
In small bowl combine the flours, baking powder, and salt. Set aside.
In large bowl whisk together apple sauce, sugar, buttermilk and olive oil. Whisk in the flour mixture until well combined.
In mixing bowl beat egg whites or aquafaba until stiff peaks form. Fold into the waffle batter.
Cook to desired crispiness in a greased waffled iron! 1/2 cup of batter at 450 degrees fahrenheit for 5 minutes is perfect for us. 
*These fluff up nicely due to the egg whites, but I suspect you could get the same thing from whipping up some aquafaba (testing still to be done though!) and make them vegan friendly. Let me know if you try it with success!
**Mix in 1 tbsp. honey vinegar or white vinegar to any 3 cups of dairy free milk to make a homemade buttermilk.
